My husband likes Carrot Cake. It is one of the few sweet treats he has asked me to make. I had not had Carrot Cake before we were married.
Its now in my top five fall treats. Right up there with Pumpkin ie, S’mores, Caramel Apples and hot cider.
The crisp mornings are motivating me to do a little baking so I decided to make a carrot cake. I sent my husband out into the garden to pick some fresh carrots.
My guess is you already have the ingredients on hand. I had everything but the carrots. They were on the small side so I believe that is why it took so many to make two cups. Stephen had to go back out for a few more.
Just go down the list adding each item in your mixing bowl. In a greased pan pour the batter. Bake at 350 for 40 to 50 minutes.
4 Eggs
C Vegetable Oil
1 C Sugar
1 C Brown Sugar
2 C Flour
1/2 tsp Salt
1 tsp Baking Powerder
1 tsp Baking Soda
1 tsp Cinnamon (If you happen to drop a bit more in no one will tell on you)
A smidgen of Vanilla (same as ubove)
2 Cups Carrots prepped (chopped fine)
Most people put a frosting on their carrot cake. We do not enjoy frosting so we eat ours right out of the oven with coffee for us and milk for the kids. The cinnamon and brown sugar mix with the orange of the carrots to create this rich colored batter.
The aroma gives me all the fall feels.
